My Mum’s Gazpacho Recipe

Perfect for a summers' day!

Serves 4

Preparation time: 15 mins


  • 1kg red tomatoes
  • 100g onion
  • 200g red pepper
  • 50g green pepper
  • 100g 1-day old bread
  • 1 clove of garlic
  • 25g cucumber
  • 125ml olive oil
  • 50ml white wine vinegar
  • Salt

For the garnish

  • Finally chopped tomatoes, onions, peppers and cucumber.
  • Hard-boiled egg, chopped (optional)
  • Serrano ham, chopped (optional)


  1. Chop all the ingredients into small pieces and leave overnight to marinade in a bowl with the oil, vinegar and a cup of water.
  2. Blend in a food processor until smooth. If the soup is too thick add a bit more water.
  3. Season and chill.
  4. Serve in bowls with garnish.
