Prawn & avocado salad

A healthy treat for all the family, which is perfect as a side salad or a main course.

Prawn & avocado salad

Serves 4

Ingredients

  • 3 tbsp mayonnaise, heaped
  • 1 pinch paprika
  • 1/2 bags prawns
  • 1 tsp ketchup
  • 1/4 cucumber
  • 3 small avocados
  • 1/2 bags mixed lettuce leaves

Preparation method  

  1. Chop up the cucumber and avocado and place into a bowl. Put the prawns into the bowl. Then put the mayonnaise into the bowl with the squirt of ketchup. Mix really well.
  2. Put lettuce leaves onto a side plate, then very carefully place the avocado/prawns etc onto the bed of lettuce leaves. Sprinkle a small amount of paprika on top.

Handy hint - frozen prawns can be used and defrosted really quickly under running water. If you do not want to use ketchup and mayonnaise then sea food sauce is just as good!
