Lentil Vegetable Soup
This soup is warm and comforting. And better still, it's only 194 calories!
Ingredients (serves 4)
1 ½ cups red lentils
1 tsp. turmeric powder
1/2 tsp. sea salt
1/2 tsp. cayenne pepper
1 Tbsp. cumin powder
1 heaped tsp. oregano
4 cloves garlic, finely chopped
2 carrots, diced
2 celery sticks, diced
1 onion, diced
5 cups water
Sliced spring onions for garnish, optional
Clean lentils by discarding any moldy beans or small rocks, then rinse until the dirty water runs clear. In a clean bowl, add lentils and cover with filtered water; soak overnight.
Rinse and drain lentils. In a medium saucepan, combine all ingredients. Bring to a boil, reduce heat, and simmer for about 20-25 minutes or until lentils are tender. While the lentils are cooking, keep the saucepan partially covered and stir occasionally. Enjoy!
