Home-made chewy muesli bars
These tasty and chewy muesli bars are delicious, simple to prepare and packed full of nutrition!
- 75g margarine
- 50g light muscovado sugar
- 75ml clear honey
- 100g rolled oats
- 50g sultanas
- 25g dried apricots, chopped
- 75g mixed nuts, chopped
Lightly grease a shallow 18cm square baking tin.
Melt the margarine in a saucepan, add the sugar and honey and stir over a gentle heat until dissolved.
Add the oats, sultanas, apricots and nuts and mix in well.
Spoon the mixture into the prepared tin and bake at 170oC for 30-35 minutes until lightly browned.
Set aside to cool for five minutes. Cut into 10 fingers and leave in the tin until completely cooled. Store in an airtight container.
You could try all sorts of nuts and dried fruit into the mix - raw pumpkin seeds, sunflower seeds, desiccated coconut, dried, unsweetened cranberries and sesame and flax seeds.
